Field for Asset Relation

All of our company hardware is physically tagged with an asset number, and listed in Alloy.

I was wondering if it would be possible to create a field in the Self Service Portal titled 'Asset' where users could include the asset number and the software would automatically assign this asset as Related to the incident rather than having to do this manually during the ticket assignment?

You can do this for sure, but it will take some SQLness to do it. You have to do a select in the update field to find the device related to the asset with the matching asset tag.
